Africa: Soaking Legumes Can Aid Children With Malnutrition

When people want their peas or beans ready in the shortest time possible, the solution is to have them soaked overnight, so they cook faster. In most cases, there is no thought directed towards the health implication or benefits of this practice.

Nutritionist, Michael Kibuule of Kim's Medical Centre describes soaking of legumes as a modified cooking method that fits specific conditions. "When feeding children who have severe energy protein malnutrition, it is important to soak legumes," he says.
