It's the time of year when Tunisians living in Cap Bon have their annual orange blossom harvest.
Once spring arrives and the bitter orange, lemon, and mandarin flowers appear, the inhabitants of Nabel, Bni Khiar, Dar Chaabane El Fehri and Hammamet start collecting them just before they bloom. Orange blossom water is extracted by the distillation of the sour orange flowers, also called bitter orange or neroli. The finished product has a very aromatic flavor, and is sweetly scented. The days of distillation are a time to celebrate in Tunisian cities.
