Uganda: Right Cook - Whole Fried Fish

Are you big on deep-frying and not roasting? You too can make your own sizzling fish dish in the comforts of your home.

Don't forget, fish is rich in essential Omega 3 fats that have been proven to boost immunity, improve libidos and other health benefits.

Ingredients:

2 medium-sized fish

Salt

Curry powder

Chilli (optional)

1 lemon (juice)

Oil for deep frying

Pepper

100g baking flour.

Method:

Clean and wash the fish.

Cut about three slits across the flesh on both sides.

Salt well and pour lemon juice in the slits.

Sprinkle with curry powder.

Leave for about 10 minutes while preparing the oil.

Heat the oil to near-smoking point.

Wipe the fish dry and dredge with seasoned baking flour.

Place gently in the hot oil.

If the frying pan is wide enough, add the other fish.

Cook till brown - do not allow to stick to the bottom.

Fish should be ready in 10-15 minutes, should be brown and crisp.

Remove from oil and drain.

Serve with assorted vegetables and lemon wedges.

Note: To check fish freshness, flesh must be firm, gills pink and eyes not sunken.
