Sudan: A New Patent to Improve the Quality of Bread in Sudan

Khartoum — The Sudanese researcher Hanadi Al-Nour Hammad has obtained a new patent (No. 4089) in the field of food sciences, which is a natural powder extracted from the leaves of Abadeib ( Ceratotheca Sesamoide) to improve the quality of bread.

Ms. Hanadi said that al-Abadeib is a wild plant that grows abundantly in North Kordofan and some other states. It is used in cooking as a substitute for waika (Sticky Okra).

Due to the lack of fame of this plant in the center and the rest of the states, the researcher decided to take advantage of its nutritional value and use it as a natural improver for bread produced from Sudanese wheat flour and Russian wheat flour.

In 2020, during the bread dearth and its scarcity, the researcher thought about solving this problem through her master's thesis that she was preparing, so she collected the Abdeib leaves and added ethanol alcohol to them to extract the substance by soaking the leaves in water for an hour and then filtering them with a filter with the addition of ethanol again to precipitate the sticky substance, Then dried, crushed and packed in a plastic container and used in the manufacture of bread in certain proportions. The bread producer fascinated the owners of mills and bakeries, who offered the researcher to buy the product, but she preferred that the product remain a national project. Hanadi will continue her PHD research to experiment with this substance with corn flour for the benefit of wheat allergy patients.

Professor Somaya Qutbi Salim, Professor of Food at Ahfad University for Women, praised this innocence and encouraged the researcher to continue research and use this powder in corn flour and millet so that everyone could benefit from it.

Sudanaw indicates that Ms. Hanadi Al-Nour Hammad Sagha, is a lecturer in the Department of Food Science and Technology and a Head of the Quality Department at the Faculty of Agriculture, Omdurman Islamic University, holds several training certificates in food science and technology from some food factories and related research centers, and also holds a certificate as an e-education and training specialist. From the Arab Board and certified as an entrepreneur coach.

Hanadi suffered alot to fund her researches at the beginning of this project but she felt glad later because her project has gotten its goals to help many people know about the benefits of Abadeib and she will work hard to finish her researches to come with more Patents.
